        The Sellini sisters share their experiences in shifting to plant-based diets, hoping to help those new to the idea. Growing up in an Italian family, they ate plenty of meat-based dishes, but Sandra opted for a vegetarian diet at 25, eventually changing to a vegan diet 25 years later;. Susan isn't a vegan, but she mostly eats plants. Rather than diving into the deep end, the two start slowly, encouraging readers to identify and understand their motives and expectations while highlighting some of the benefits of vegetables, sharing war stories, and providing a year-long plan for migrating to a vegan diet. They include plenty of recipes (such as stuffed mushrooms with basil and walnuts, and a Swiss chard and chickpea soup) that are surprisingly easy to source and prepare, and are well within the capabilities of even the most novice home cooks. Many dishes call for just a handful of ingredients and come together in a matter of minutes.
